The most impactful thing The Dirty Souls is doing at the moment is paying close attention to our waste reduction and waste control elements. We do not use ice for the majority of our cocktails; we also reuse a lot of waste products, such as pineapple husks to make our pineapple lemonade or to infuse it with vodka, or using beef or bacon fat to fat-wash our bourbons, or using wasted potato peels for our fries.

The main business benefit of looking into our waste control management is the financial impact in the long term, and investing in what we can be responsible for in giving back to the community. We spend a lot of time educating our bartenders, and even our guests, about how they can make drinks from by-products.

Our advice

If you are a young business looking to start reducing carbon, do a lot of research into what you can actually do. Look at how you can control your waste, look at the initiatives that are around and what the local council has to offer. Speak to other businesses, as that is who we learnt from.
